Janine is a bakery and brewery that aims to reintroduce into its production cycle the residues of each activity: breads from spent grains and brewer's yeast and beers from unsold breads, all in an artisanal and local approach.
Over the first 3 years of their activity, they will reintegrate 3 tons of bread into their beers (and therefore 3 tons of malt that will not be used during their brewing in 3 years) and 3 tons of spent grains in their breads. This is equivalent to: 1 beer of 33 cl = 1 slice of bread and 1 loaf = spent grains of 2 beers of 33 cl.
Fun fact: Janine is the first name of Maxime and Bertrand's grandmother (2 of the founders) which represents for them memories of good food, conviviality, generosity, good smells... that they want to reflect in their bakery brewery.
